Chicken Tikka Masala

Do you like curry as much as I do? I find it so comforting, the aromas, the subtle spice and the heat, oh the heat! Part of it too is, I love acquiring new spices. Yes please, and garam masala was no small feat to find in Spokane (I should have just made my own though!). It makes the eating so much better. The best part of this meal, aside from the taste, it is so easy. Not only that but it doesn’t really take long, and makes beautiful leftovers. The second time I made this recipe I sauteed carrots, potatoes and onion in a second pan for a vegetarian version.

When I first set out to make curry, Andy gave me this face of disgust. He apparently had some strong feelings about a certain mashed peas and curry dish of his childhood. Sorry Bon, I don’t blame him, mashed peas and curry sounds revolting. This, though, is delicious.

Tikka Masala is Kennon’s and my favorite food ever. We had it for dinner last night in fact. The best we’ve had is from eating out, even though we have tried like 6 different recipes from 6 different Indian cookbooks. We haven’t gotten it right yet. Next time I think we’ll use this recipe. Did you make any changes to it?

Jerry, i hadn’t had tikka masala much before this recipe, but I have eaten some really great indian food (home made by a coworker). So you might be pickier about the taste than I am, nonetheless this is a solid recipe. Good flavor and very crowd pleasing. My entire house loved this dish. I like to think I have a good radar for decent recipes. :) I did use one onion less than the recipe (mostly for my kids) and if it were up to me I would put two jalapeƱos for extra heat, I love it spicy, but my house is full of weenies.

Also, I waited to cut the chicken up till after it was cooked under the broiler, it just seemed easier. Yogurt marinated chicken is my new favorite way!
