beans!

So, it is fall winter and pretty much that means eating good, er bad food.  I have baked bread, made creamy soups, tarts and pies, but this meal is my favorite.  Are you ready, Homemade Refried Beans.  Yum.  I don’t believe I have ever made or eaten homemade refried beans.  You must eat these!  They are creamy, light and oh so good, and surprisingly (or not) taste nothing like the canned stuff.  I am hooked for life.  It’s definitely not a hard recipe, but requires forethought to soak the beans and then let them simmer awhile. Of late, I have been craving Easy Street’s egg scramble with chorizo and I ventured to recreate and egg/chorizo breakfast burritos to go along.  I used store bought Mexican chorizo, which is really thin and not that good.  I definitely need to make my own.   Despite the cold, and being trapped in doors, this is cause enough to love winter.

ironic! i just made refried beans last weekend….along w/ carnitas & get ready for it…pupusas! i also recently discovered a delicious recipe for Mexican shredded chicken. i’ll e-mail you the recipe(s) if you’re interested. a pupusa or two will make anyone’s winter a bit better.

Yum. This sounds really good!
So, I have to ask, did you really add salt pork and bacon? That seems like A LOT of salt to me but if it worked…I’ll go for it! We(I) made homemade tamales a few weeks ago and froze a ton. Lots of work but oh, so good!

Nene, I had no idea what pupusas where until I looked them up. My goodness. Cheese filled bread/tortilla. Yes please.

Alisha, I have always wanted to make tamales but never had. Hmm, now I want to try. As far as the salt, no it was not too much salt. The salt pork just simmers with the beans, then you toss it. And for the bacon, I think it added more of the fat content than anything. It still felt like it needed a little bit of salt at the end. I know, yikes.
