K is for Kale

One of my broader goals in life is to try new foods or that I haven’t eaten in a long time. **Not only to retry them, but also to cook them in a healthy fashion**  Tonight was kale.  I don’t know why or how I had never tried kale.  I didn’t even know it was a type of cabbage, I thought is was some weird seaweed.  It was wonderful.  I flash cooked it with salt, olive oil, garlic and topped with a bit of parmesan cheese and pine nuts. I definitely avoided significant wilting.  I hate mushy squishy vegetables.  Maybe that’s why I didn’t try them -I have a bad remembrance of mushy spinach (gross).  The sweet potatoes are amazing.  I didn’t put the coconut or macadamia nuts on top but they are great without.  I got these recipes (and the pictures) from my favorite healthy food blog.  It is honestly one of the best meals I have ever had.  Even Andy liked the kale.  I made it with some roasted chicken -delish.  That was the best part of my day.  Super interesting, huh?!

Pray for me tonight.  I don’t want to go to sleep for fear of stalker addy.

i honestly would have never thought to try it either. maybe i should give it a try.

if it makes you feel any better, andrew has woken up twice a night for the last week to tell me he peed in his pull up. he will come in and turn our light on and say “Get up mama.” awesome.
